Hi friend, how are you today? I’m good and so excited to share the Homemade Peach Pie and Ice Cream with you today.
My friends at Ginnys.com asked me to bake a pie for National Pie Month and they were so sweet to offer a few new goodies for our kitchen so I chose their fabulous Ice Cream Maker so I could make homemade Ice Cream to go with it.
I have to confess this was my very first homemade pie and very first time making homemade ice cream and I have to say after today, I should have done it sooner. So if you are like me and baking might be intimidating don’t let it be.
This is my new Ice Cream Maker and I love that it is small and easy to use as well as easy to clean up.
My daughter helped me with the Ice Cream so it was a double win getting a little girl time in the kitchen with her too.
Oh and if you were thinking about a new hair color for fall you might want to try a bright red like she did. So she whipped up the ice cream and we churned it and then put it in the freezer. I’m going to share how to make the Ice Cream with you soon.
Here’s what you need to make the Peach Pie.
3 1/2 Lbs of Peaches
1 Tablspoon Lemon Juice
1/2 C Sugar
1/2 C Flour
1/2 Teaspoon Vanilla
1/2 Teaspoon Nutmeg
1/8 Teaspoon Salt
Peel and slice the peaches and put in a bowl.
Add in all ingredients and mix gently.
So it will look like this and set aside.
For the Crust you need:
2 1/2 C Flour
1 1/3 C Shortening
1 1/2 Teaspoon Salt
1/2 C Water
6 Tablespoons Flour
Mix the Flour, Shortening and Salt together with a fork. Add water and 6 tablespoons of flour in a small container with a lid and shake it up. Continue to mix until the crust mixture is small pea size balls and then add the water/flour mixture.
Using your hands gently roll the dough until it’s in a ball like this. Cut in 1/2 and roll out one 1/2 onto floured wax paper to create pie crust bottom. Spray non stick cooking spray into pie dish. Add pie crust to bottom and form the edges too.
Pour in your peach mixture into piece crust and spread as evenly as you can. Roll other 1/2 of pie crust and cut strips for lattice top. I first laid it out on wax paper and then flipped it onto my pie and with my hands gently placed the lattice as evenly as I could.
For Egg Wash on top I beat an egg and added 1 tablespoon of water and brushed it across the top.
I baked on 375 degrees for an hour. Some recipes called for 50 minutes but we do have an older oven so it tends to take longer so it was the full 60 minutes maybe even 65, I just kept checking until it was golden brown.
Our house smelled so yummy and of course I told my husband that this was baked with pure LOVE.
It was so delicious and I can’t wait to try my hand at some other yummy pies and of course lots more ice cream….lol.
